Dining

The dining services at Summit seek to provide healthy meals that are made from scratch with diverse options including protein, carbohydrates, fruit, fresh vegetables and of course the occasional treat!

We are very pleased to have Eoin Moynihan, from Douglas, Ireland, as head chef. Eoin has a passion for food and has forged ahead to train our staff in new ways to revolutionize the menu offered here at Summit. Professionally trained at the Cork Institute of Technology, he studied Professional Cookery and Culinary Arts. In his own words, “My goal is to introduce a wide range of healthy foods, varieties and textures to the students. It is always fun to create dishes they may not have experienced before.”

Below is a sample of what you may find offered during the day:

Breakfast 6:30–8:00 AM
Cereals
Oatmeal
Homemade pastries or banana bread
Bagels
Fruit
Yogurt
Coffee, tea and juice

Brunch 11:00 AM (offered twice a month)
Pancakes
Sausage
Bacon
Eggs
Muffins
Fresh fruit and cream

Lunch 12:30 PM
Homemade soups
Sandwiches
Fresh salad or homemade pasta salad

Dinner 5:30–6:30 PM
Meat Dish (i.e.: grilled chicken, baked coconut fish, shrimp pasta, pork, braised ribs, etc)
Fresh vegetables
Salad Bar

Our food is provided by local suppliers including a local farmer’s market. In the future we would like to incorporate a variety of styles of cooking and international cuisine. Bon Appetit!

Summit International School of Ministry is a Bible school located near Harrisburg, Pennsylvania. Our 100-acre campus is situated near the foothills of the Blue Mountains in the heart of farm country.
